Why a cup of flour isn't a cup of flour
Two batches of the same cookies, three weeks apart, from the same recipe. One comes out soft. The other comes out dry and faintly tough. Nothing changed — same oven, same butter, same bag of flour.
Something did change. You measured the flour differently, and there was no way for you to notice.
A cup measures space, not flour
A measuring cup is a container of a fixed size. How much flour ends up inside it depends entirely on how the flour got there.
Dip the cup into the bag and you compress the flour as you push through it. Spoon it in gently and it stays aerated. Same cup, same flour, quite different amounts:
- Spooned in and levelled — about 125 g
- Dipped and scooped straight from the bag — roughly 145–150 g
- Scooped, then tapped down to settle it — over 160 g
That is a swing of about a quarter. If a cake asks for two cups and you scoop, you may have added most of an extra half-cup of flour without ever reaching for the measuring cup again.
Why baking notices and cooking doesn't
A stew with a quarter more carrot in it is a stew. Nobody is harmed.
Baking is a ratio. Flour, liquid, fat, sugar and leavening are in a relationship with one another, and the flour is the part that sets the structure. Add a quarter more of it and there is suddenly more starch and protein than there is water to hydrate it and fat to tenderise it. The crumb tightens. The cake domes and cracks. The cookies spread less and dry out a day early.
None of that reads as "too much flour" while it's happening. It reads as I'm not very good at baking.
The fix costs about fifteen dollars
A digital kitchen scale is the single highest-leverage object in a home kitchen, and it is cheaper than a good saucepan.
Weight is unambiguous. 125 g of flour is 125 g in Lyon, in Osaka, packed or fluffed, in a mixing bowl or a measuring jug. It removes the variable entirely rather than helping you manage it.
It is also less washing up. Put the bowl on the scale, press tare, add flour until it reads 125, press tare again, add the sugar. One bowl, no cups.
If you'd rather not buy one
Use the spoon-and-level method, and use it consistently:
- Fluff the flour in the bag or canister with a fork — it settles in storage.
- Spoon it into the measuring cup until it heaps over the rim.
- Level the top with the back of a knife.
Never use the measuring cup as a scoop, and never tap or press it down. What matters most is that you do it the same way every time, so that when a recipe works you can repeat it.
Which ingredients this actually matters for
Some things compress and some things don't. It's worth knowing which is which.
Worth weighing:
- Flour, all kinds — and note they aren't interchangeable by volume either: a cup is about 114 g of cake flour, 125 g of all-purpose, 127 g of bread flour.
- Cocoa powder — 85 g a cup, and it compacts badly.
- Powdered sugar — 120 g a cup, and it clumps.
- Brown sugar — 213 g a cup, where the recipe instruction is literally "packed". That convention exists because everyone knew a loose cup of it meant nothing.
- Leafy greens — a cup of spinach is 30 g if you're honest about it and closer to 80 g if you stuff the cup.
Barely worth the bother:
- Granulated sugar — hard crystals that don't compress. 200 g a cup, near enough every time.
- Liquids — milk, water, oil. A cup is a cup. This is the one place the measuring cup is doing exactly the job it was designed for.
The other cup problem
Even a perfectly, patiently levelled cup isn't a fixed quantity once a recipe crosses a border. A cup is 240 ml in the United States, 250 ml in the UK, Canada and New Zealand, and 200 ml in Japan. Australia uses the 250 ml cup but pairs it with a 20 ml tablespoon, the only one of its size anywhere.
