Whose cup?

A cup is not one size. The United States measures 240 ml, the UK, Canada and New Zealand use a 250 ml metric cup, and Japan's カップ is 200 ml — so the same recipe line can mean a fifth more or less flour depending on where it was written. Australia shares the 250 ml cup but uses a 20 ml tablespoon, the only one of its size.

Why weighing beats scooping

These figures describe condensed milk measured the usual way, but a cup is a container, not a quantity. Flour packed tightly into the cup can outweigh the same cup loosely spooned by a fifth — which is the single most common reason a baked recipe comes out differently than it did last time.
